Which reminds me….Neggie got “cake” for her 50th…
Linda – Jenna found a recipe for tomato cake! We had a volunteer who owns a bakery translate it into a vegan recipe and Jenna made little cupcakes. Sounds funny, but it’s sweet like a banana bread and so good. Missy food grunted the entire time she ate it!
Oh my gosh, that’s hilarious! I’ve had zucchini “bread”( it’s cake), and strawberry, too. but never heard of tomato! Can’t wait to see it!
There are all sorts of nut cakes, too, that I’ve made for a friend’s grandson, who’s diabetic and celiac. The almond cake I mentioned before, and marjolaine– mostly hazelnuts and egg ehites with a tough of flour (chow dust?), sugar, then layered with chocolate cream and orange or butter cream (I’m sure coconut cream would work):yum:
As a big fan of sweet juicy end of summer tomatoes, I think your tomato cupcakes sound scrumptious. You may have to share that recipe with all of us. Perhaps, CSNW needs to produce their very own healthy lifestyle cookbook. So many of your treats look delicious.
Wow! that climb to the top of Carlene’s Tower must’ve been before my time because I don’t recall those photos. Amazing. Just think how far she’s climbed in life.
